Nothing screams fall more than pumpkin spice, and these fluffy, festive pancakes are the perfect way to kick off Halloween morning.
Pumpkin Spice Pancakes
Ingredients:
1 1/2 cups (180g) all-purpose flour
1 tablespoon (12g) baking powder
1/2 teaspoon (3g) salt
1 teaspoon (2g) cinnamon
1/2 teaspoon (1g) ground ginger
1/4 teaspoon (0.5g) ground nutmeg
1/4 teaspoon (0.5g) cloves
1/4 cup (60ml) sugar
1 cup (240ml) milk
1/2 cup (120ml) pumpkin puree
1 egg
2 tablespoons (28g) melted butter
Instructions:
In a large bowl, whisk together the flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
In a separate bowl, mix the sugar, milk, pumpkin puree, egg, and melted butter until well combined.
Slowly pour the wet ingredients into the dry ingredients and stir until just combined—don’t overmix!
Heat a non-stick skillet over medium heat and pour about 1/4 cup (60ml) of batter for each pancake. Cook until bubbles appear on the surface, then flip and cook the other side until golden.
Serve your pancakes stacked, topped with butter, maple syrup, or whipped cream, and dust with a bit of cinnamon for that extra spooky touch!
Spooky Smoothies
Get your ghosts and goblins energized for the day with a nutritious smoothie that’s easy to make and fun to drink! The key is using dark or bold-colored fruits and adding a few spooky toppings.
